We are pretty sure that popsicles are the next big thing. They are sweet and refreshing, and can hold infinite flavors. Have you ever had a luscious slice of watermelon with a dash of salt? It’s delicious. These Salted Watermelon Margarita Popsicles, adapted from the How Sweet It Is blog, are packed with sophisticated flavor. Popsicles – not just for kids anymore!
- 4 cups watermelon chunks
- 1 cup sugar
- Zest of 1 lime
- 1/2 cup fresh lime juice
- 1/3 cup good quality tequila
- 2 Tbsp Grand Marnier
- 10 thin lime slices
- Sea salt
- Put the watermelon in the blender and puree it until smooth. Pour the puree through a fine sieve and push through as much juice as you can.
- In a small saucepan, heat 1 cup watermelon juice with the sugar and lime zest. Let is simmer for 1 minute, and then take it off the heat. Combine it with the rest of the watermelon juice, the lime juice, the tequila, and the Grand Marnier. Make sure it is well-blended.
- Drop a lime slice in each popsicle mold. Pour the Margarita mixture over it and freeze until solid. When you’re ready to serve, pop them out of the molds and sprinkle a bit of salt over each one.
