Your Easiest Side Dish Yet: Potato And Bacon Foil Packets!

Since one of the most tiresome things about creating a nightly meal for the family is having to deal with the ever growing mountain of dishes that comes along with the territory, finding recipes where there are little to no dishes involved is a fantastic revelation. These bacon and potato foil packets require no baking dishes to scrub down at the end of the night, and you can even eat them straight out of the foil to avoid a dirty plate.


  • 4 red potatoes, chopped
  • Olive oil
  • Bacon bits
  • Garlic
  • Shallot
  • Reserved bacon fat
  • Salt and pepper, to tase
  • Aluminum foil

Make it!


  1. Start by chopping the potatoes into chunky pieces. Place these pieces into a large mixing bowl, then drizzle some olive oil on top.
  2. Add in the bacon bits, garlic, shallot, and reserved bacon fat as well, then add salt and pepper to taste. Make sure to mix all the ingredients well.
  3. Take a piece of tin foil and fold it so that there are edges to bring in. Place the seasoned potato pieces in the center of the foil, then cover entirely and seal the foil.
  4. Bake these packets for 25 minutes at 400°F then let cool slightly, and serve!
