Breakfast foods are undoubtedly delicious all throughout the day, and the combination of sweet and savory is a duo that can be enjoyed well after your morning meal. These blueberry pancake bites are the epitome of eating breakfast all day long. Try them out for yourself and we challenge you to try and resist snacking on them all day long! You can even dip them into a glaze or some syrup to give it a little something extra.
- 1 egg
- ½ tsp vanilla extract
- ½ cup milk
- 2 tbsp melted butter
- 1 cup flour
- 1 tsp baking powder
- ½ tbsp sugar
- Preheat the oven to 375°F. In a large bowl, mix together the egg, vanilla extract, milk, and melted butter. Stir them all together well, then add in the flour, baking powder, and sugar.
- Fold the dry ingredients into the wet slowly, until the mixture begins to harden and forms a light batter texture.
- Pour this batter into a muffin tin, scooping a hefty tablespoon into each tin cup.
- Press a few blueberries into the batter of each of the cups. Pop them in the oven for about 12 minutes, then serve warm!
